Woman WOODEN SPOON CLUB
request dish lobster thermidor FOR SIMONE
YOUR letters to WOMAN Wooden Spoon Club have proved to me that you don't necessarily have to be married, with a kitchen of your own, to be interested in good food and how to prepare it.
So this week, representing all the teenagers and young unmarrieds who like experimenting with recipes, my guest is Simone Myers. She's twenty and a beautician at a well-known hairdresser's in London's West End.
Off duty Simone likes dancing, going to the theatre and cooking in her parents London flat. She specially likes making and eating sophisticated food, and her request dish was something quite special, Lobster Thermidor.
I thought it an excellent choice as lobsters are fairly reasonable at the moment. For this dish you mix the flesh of the lobster with a delicately flavoured sauce, replace it in the shell, then serve it grilled.
I advised Simone to ask for a dressed lobster when she makes this dish. It saves all the worry as to whether the non-edible parts have been removed.
Simone watched me cook Lobster Thermidor, you can see how in the step-by-step pictures on this page.

She ate the result for lunch in the Wooden Spoon Club.
Now she's longing for the weekend and a chance to show off her new dish to an admiring family.... RUTH MORGAN
In the Wooden Spoon Club, Simone accepts from Ruth a lunch of Lobster Thermidor which she has seen prepared
Use garnish of mashed potatoes and watercress
NEXT WEEK: sponge flan
